Natural Honey is a product
made by honey bees from nectar and pollen grains which are produced
by special glands in the flower of plants.
The bees reduce excess water
from nectar by evaporation, they first reduce the moisture content from
80% to about 40%. In addition to reducing the moisture content of nectar,
honey bees also add enzymes from within special glands in thier bodies,
these enzymes present in honey are the catalysts which allow all nutritious
substance to be digested.
The honey bee must continue
further organizing of the substances from the point where the plant
has transformed its sugar sap into nectar from the nectar and pollen
of the plant which are its food, the bee produces wax which is formed
into hexagonal cells inside which stores the honey.
Several bees take part in
the production of honey, the field bee or forager brings a load of nectar
to the hive and transfers it to a house bee, the house bee then proceeds
to the empty part of the hive where she exposes the nectar to the air
while bieng fanned by the fanning bees.
The air in circulation helps
reduce the moisture content of the nectar and aids sugar concentration,
the time required for nectar to mature into honey depends on its original
moisture content. If the sugar content ofthe nectar is high. Ripening
takes about two hours, if however the sugar content is low, more time
is required.
Mature honey usually has
over 80% sugar concetration. When matured, the honey comb where honey
is stored is usually sealed. Matured honey can be harvested and be stored
indefinitely. Unsealed honey is not ripe and therefore ferments shortly
after it is harvested.
